Hardees switcheroo

Everyone knows how much we love burritos. So when Hardees came out with the "Loaded Breakfast Burrito", I was kinda anxious to try it. Now, I wasn't expecting it to be like breakfast burrito served at Grumpy's in San Antonio, TX, but this was ridiculous. The good ole switcheroo. This is what Hardees offers you on the menu, in their ads, and plastered in vinyl on their windows:



This is what you actually get. Drumroll please... nevermind.

There was nothing loaded about this burrito and the salsa tasted watered down (??). I didn't even finish it because I was getting upset that I had been played by Hardees.

Bangin? Nope.

Saturday BBQ

Yummy rib, hot off the grill!

Boy is it hot around here!!! 100 degrees, with an index of 105! My poor Island blood can't take the heat! We got one of those Intex Swimming pools and hung out for a while cooling off. JP pulled out a slab of ribs, and the Saturday BBQ plan was on. JP is our resident BBQ master. I usually do all the side stuff. Don't get me wrong, I could BBQ some stuff if I have to. But, he's the best...so we'll just leave him to it! I usually do potato salad, but we didn't have any this time. I also have a cold, and can't taste or smell anything, not a good combo for cooking. I did make some Salmon Rice balls. Not sure how they tasted. LOL JP pretty much cooked the whole meal. He did some Turnip Greens, baked beans, Ribs and the sauce! I did the rice and rice balls. Ha ha!

Salmon Rice Balls. I threw a little bit of Nori in there, and salted. I let them chill in a fridge for a little while.




After everything was done, we ate in the sun room. It's always nice eating in there. Everything was great. We love to BBQ, we usually do it a lot throughout the year. We usually have a larger spread, but we kept it simple this weekend. Next time I'll do a step by step post of our BBQ favorites. Hopefully my taste and smell comes back soon, this is not good for a person who likes to eat and cook!

Recipe of The Day: Ground Turkey Meatloaf


Here I go again, into the world of Turkey! Not only is turkey very cost efficient, there are just so many things you can do with it. I really am not missing ground beef! Not sure about the rest of the family. LOL So, today I tried my hand at Turkey Meatloaf. I think it came out pretty good. Not as big as I liked. I suppose I should use two packages of ground turkey, instead of one.


Ground Turkey Meatloaf

1-2 packages of ground lean turkey
1 teaspoon Herb De Provence
1 teaspoon salt
1 teaspoon black pepper
1 egg
1/2 cup bread crumbs
BBQ sauce for glaze on top
1/2 cup chopped onion (optional)
1/4 cup mushrooms





Chop your onion, garlic, and mushrooms





Open your package of turkey and place in a bowl or dish. Add in your chopped onion, garlic, and mushrooms. Mix well. Then add in the rest of the ingredients, and mix well.



Form into a loaf like shape. I tried! LOL I could have used a loaf pan I guess. Put into a baking dish or loaf pan. Preheat oven to 350 degrees. I let it cook for about 30 minutes, and then I start brushing BBQ sauce on the top. I cooked this for about an hour. I kept brushing the BBQ sauce on until it was done. There are other variations on making this. You can add rice, and other different herbs and seasonings. I think overall this came out pretty good. It was moist.


I like lots of onions...you can see how many I put in there!

Hey Hey

So I've been under the weather the last week. Which means, I haven't been doing much cooking. Sunday I had to do some serious improvising! LOL I made my own homemade Hamburger Helper. Well, not hamburger...more like ground Turkey Helper. Ha ha! It actually tasted very much like Helper. The kids loved it! I shall post the recipe for that. Today, I did shredded chicken burritos. I seasoned the chicken myself instead of using the premade package taco seasoning. I also fried some flour tortillas for the kids, so they can have chicken tacos. I felt like I haven't cooked in ages! I made my famous gauc, black beans and rice. I'm going to try and cook some more things this week. I feel like I never have enough time to really cook anything good.

Turkey Helper
1 package ground Turkey
1 box mac n cheese (any brand)
1 cup cheddar cheese and mozerella cheese (add more if you ilke I used cubed cheese)
1 teaspoon chili powder
1/2 teaspoon black pepper
salt to taste
1 teaspoon onion powder
1 teaspoon garlic salt
dash of Tony Chachere's

Brown turkey in pan and add in about half of the seasonings. I really do this buy eye, and just dash a good helping all over it. I did thi in a non stick pan, so Ididn't add in any oil or butter. Cook Macaroni according to box. When done drain and add to turkey. Add the rest of the ingredients on the Macaroni box. Add in the rest of seasonings and cheese. Mix well and simmer on low for a few minutes. That's it your done. I made some Garlic Parmesan Bread to go on the side with some veggies. Everybody seemed to like it!

Shredded Chicken For Burritos or Tacos
4-5 pieces of cooked chicken
1/3 cup jalepenos (chopped)
1/4 cup onions(chopped)
3 garlic cloves (minced)
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
couple dashes of black pepper
1 teaspoon salt
1 teaspoon ground cumin
1 dash of Carne Asada Seasoning
1 teaspoon dried cilantro (you could use fresh, probably should use less if you do)
1 teaspoon dried chives

Shred chicken. I just use my hands. Place all ingredients in a pan on medium heat. Saute to get everything well mixed. Simmer on medium low for about 20 minutes. You can adjust the seasoning to your taste. I like stuff spicy, so I like to throw in extra cayenne and peppers. You can use this for burritos or tacos.

So, that's all I have for today.
