Recipe of The Day: Fish Tacos

Sorry folks, I have no picture for this one. I made them at the spur of the moment, and devoured them shortly after! LOL I was stuck thinking about what to make for lunch last Saturday. I had some corn tortillas, and decided on tacos. I didn't feel like shredding chicken, so my next option Fish! We have some lovely pieces of Whiting which were perfect. To my surprise, everyone enjoyed them. So, I'll be making these again.

Feather's Fish Tacos

Prep Time:20 minutes
Cook Time:20 minutes
Serving: Family of 4

Ingredients:

4 Medium-Large Whiting Fillets(or any other type of fish you prefer)
1/4 cup Jalepenos chopped
1/4 cup onions
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 lime
1 tablespoon olive oil
1 package of fresh corn tortillas
oil for frying tortillas
sour cream
shredded cheese mix

(Feel free to adjust seasonings to your liking. We love flavor. So add or take in what you like)

You may want to fry your tortillas first, just to get them out the way. I fill a pan about a 1/4 of the way with oil. Heat oil on medium heat on stove. Take a tortilla loosely fold in half. Kind of slowly sway the tortilla back and forth into the oil, and then drop it in all the way. Cook on both sides until crispy. Drain on paper towel.


For the fish. In a saute pan, drizzle the olive oil. Lay your fillets down in pan on medium heat. Sprinkle in your seasonsings, jalepenos, and onions. Cut lime in half, and squeeze one half over fish. Let fish cook on one side for about 5-6 minutes. Turn over, squeeze other half of lime over fish. Let fish cook until it starts to flake and looks done. Remove fish from pan and place in a dish.

Assemble your tacos. Place fish in corn tortilla shells, top with cheese and sour cream. Very simple and it tastes sooo good! Enjoy!

Recipe of The Day: Cold Somen Salad


I'm on a Asian food kick. I've been craving a lot of my favorite local treats. I did make a trip to the Asian store to pick some things up. One thing I do love is Cold Somen noodles. I haven't eaten any in a long time, so I picked some up the other day. I ate some for lunch yesterday and had some today as well. Yesterday, I made a sauce that was on the back of the package. It had, chopped garlic, sesame seed oil, vinegar, sugar, and Korean Chili Paste. It was pretty tasty with a few pieces of chopped spam on top. Yum! Today, I made a different version. Here is the recipe...


Cold Somen Salad


Prep Time 15-20 minute
Serving Size 1-2 People
Cook Time 2-3 minute for noodles


Ingredients:


Chopped ham (or any other type of meat you like)
1 stalk green onion
1 egg cooked and cut into strips
Furikake or cut strips of Nori or Seaweed
1/4 cup cut cucumber cut into matchsticks
Somen Noodles

Sauce:
1/2 cup Soy Sauce
1/2 cup Rice Wine Vinegar
1/2 cup Sugar
1 teaspoon Sesame Seed Oil


Mix all ingredients for sauce, well. Place in refrigerator. Chop all of your ingredients. Cook egg and cut into strips. Cook Somen noodles according to package. It usually takes about 2-3 minutes. Rinse noodles under cold water. Arrange noodles on plate, add in your other ingredients pour sauce over and enjoy! Simple and easy to make. Very good for hot summer days.

Recipe of The Day:Teriyaki Chicken and Kimchi Udon


The other day I made some home made Teriyaki Chicken. This is a recipe that is simple and tastes great! The kids love it. I also do this recipe with other meats,such as pork and beef. You can cook the chicken on a griddle, the BBQ grill, or a pan. It's up to you. This time I chose to cook the chicken on the griddle so I could knock the whole batch out at once. I serve this with hot rice and veggies.

Teriyaki Chicken

Prep Time 1-1 1/2(including marinade time)
Serving 4-6 People
Cook Time 20-25 minutes

Marinade Ingredients
1-2 inch knob of ginger(use less if you don't want it to strong)
2-3 stalks green onion
1 cup Soy Sauce(use half for less saltiness)
1 cup Rice Wine Vinegar(use half for less intense flavor)
2-3 tablespoons brown sugar

Ingredients
4-5 boneless thighs or debone thighs

Marinade chicken for 1-2 hours. The longer you marinade the better the flavor. Heat griddle, place chicken on griddle. Spoon left over marinade over chicken. Keep spooning over. Cook chicken until sauce starts to get sticky and caramelized. When chicken is a nice brown color and the sauce is a nicely coated on chicken it's done. Very easy.


I also wanted to share one of my favorite things to eat! I looove Udon noodles. Sooo good. I got myself some today. Threw in a bit of Kimchi and I was good to go! Hot, spicy and delicious! I got the Assi Udon noodles, which is a Korean brand. You can find it in most Asian Markets. You can add anything you want to it. Komoboko (fishcake), spam, green onions, and Kimchi are all very good in this. Well, I plan on doing some cooking this week. Hopefully get some things posted. Hope you enjoyed the recipe!

Gas Prices, Belgian Waffles and My Garden!

Remember when gas prices were this low? We took this picture right here in South Carolina. For some reason it was never taken down. I guess they want to remind of us how things use to be. The good old days! I could go on and say that I blame the gas prices for the lack of our posts. I mean everything else is blaming gas prices. But, that is not the case. We have been so busy. This summer has been exhausting. Taking the kids on a week long road trip. Keeping the kids busy and maintaining the household is a daunting task. We have eaten some good food this summer and have done our usual weekend grilling. I've been cooking daily, sticking to the usual. Haven't really done anything new at this point. As soon as things die down a bit, I'll probably start trying out some things. With that said, I did receive a new kitchen goody! Yippee! Grandma keeps sending us fun things. I still have a few items I need to post about.





We got the Waring Professional Belgian Waffle Maker. It has five settings for crispness. It rotates a 180 degrees for even browning. I found a simple waffle recipe online to try it out with. They provided recipes, but I didn't have any yeast.


Here is the recipe I used Classic Waffles. Crispy on the outside, soft inside. I'll have to experiment more with different recipes. Overall, I think this waffle make works very well. It beeps when your waffle is ready. You do have to put on a generous amount of oil or cooking spray to ensure it doesn't stick.

So, on to my garden. It's starting to produce some nice produce. Hee hee! I've got alot of Banana Peppers and Jalapenos. I've picked a few. I have one little Bell Pepper. My squash plant died. It was probably to hot. I've got 4-5 Tomatoes. My cucumber's are still growing. So it's looking good so far.





So hopefully we'll be back soon with some new food stuff.

Hey out there!

We've got to get back on the grind! We've had a busy Summer so far. We took the kids on a week long road trip. Things have been so busy. But, of course we are still cooking and eating! LOL As soon as we get some time we will post some things. Hope everyone is having a great Summer as well. :)
