Recipe of The Day: Korean Ribs (Kalbi)


Yum yum in my tum! Korean Short ribs! These things are sooo good! Though mine isn't an exact recipe, it still tastes great. The marinade can actually be used on a lot of other types of meat. Today I used a flank style beef rib. You can find this cut of meat at your local grocery store. If they don't have it, you might be able to ask if they can cut it for you. The marinade you can prepare yourself, but they do sell a pre-made Kalbi marinade pack. My Mom sends me the packets sometimes, I've never found them here in South Carolina. They are a Hawaiian brand, which she seems to find easily in California. I've seen many variations on this recipe, some call for Sherry or Dry Cooking wine. Here is my take on it...





Korean Ribs (Kalbi)
Prep Time: 3-4 hours to Marinate Meat or overnight for best results
Serving Size:4-6 people
Cook Time:20-25 minutes

Ingredients:
2 packs of short ribs or flank style beef ribs
2 stalks green onion
1 inch knob of fresh ginger
1 tablespoon sesame seed oil
1 cup soy sauce (use any brand, I'm stuck at the moment with Kikomon I prefer Aloha Shoyu)
2 tablespoon brown sugar
4-5 cloves of garlic




Take ribs and cut into halves. Place in a air tight plastic container.


Chop all of your green onion. Finely chop your garlic and ginger. Throw in container with meat.


Pour in soy sauce.


Add in your brown sugar and sesame seed oil.


I like to place the lid on the container and give it a good shake. This will help evenly distribute the marinade over all of the meat. Place in refrigerator for a few hours or overnight for best results.



Once meat is done marinating, place on a hot griddle and cook until it is nice and brown and some nice crispy bits on it! You don't have to use a griddle a BBQ grill is another great option to cook these. You can even fry it in a pan.


You should end up with something like this!



I like to serve it with hot rice sprinkled with Furikake and some nice veggies. Fresh Kimchee is even better. Don't be afraid to try something new. This is a great recipe most people will enjoy.

Recipe of The Day:Cube Steak w/Gravy and Mashed Potatoes


Finally got around to snapping photos of something I really had to take time to cook. lol I know a lot of people who frown upon cube steak. But, hey in this family we dig it! If cooked correctly, it is very tasty. Some people tend to cook it, and it's to tough. Cube steak is a cheap cut of meat, and I believe the butcher actually tenderizes it. I personally like to do a little extra tenderizing myself. I learned this recipe from my Grandmother. So here we go...


Prep Time:15-20 minutes
Serving Size: Family of Four
Cook Time: 30minutes


Ingredients for Cube Steak:
1 package of cube steak
1 medium onion
1 packet of Brown Gravy Mix (gravy packet not shown, you can make your own if you want or use any brand you like)
flour for dredging
garlic salt
Tony Chachere's Creole Seasoning
Onion Powder





Place one piece of cube steak in a ziplock bag. Take a meat tenderizing mallet or anything you can use to beat the heck out this meat! I used one of JP's hammers! lol


Beat it until it looks like this. Almost thin.


Lightly season. You do not have to use creole season, I just like the extra kick. You can use season salt. Do a light coat, not to much.

Cut large pieces into smaller ones.


Your pieces should look like this.



Dredge in flour.


Place enough oil to coat bottom of pan. Heat on medium heat. Tap off excess flour, and place in hot oil. Do not cook all the way. Just get a nice brown look on both sides.


They should look like this. Drain on a paper towel, and set aside.



Chop up your onion. I like to use a bit of the dripping for the gravy. Drain most of the oil out. Add about a 1/2 a cup of water to the drippings. Throw in onion. Mix your gravy packet, according to package. Pour in pan, and let simmer a few minutes.


Drop in the pieces of cube steak. Cover and let simmer about 20 minutes.


Mashed Potato:
Ingredients:
6 medium potatoes
salt and pepper to taste
milk
butter
sour cream
Peel and chop potatoes. Place a pot and cover with water. Boil potatoes until you can break them easily with a fork.


Drain potatoes, and place in a bowl. Add in a bit of salt, pepper and butter.


Start to mash potato with fork or potato masher.


Add in a tiny bit of milk. (sorry I do this all by eye) Don't put a whole lot. The potato should still be a little dry at this point. Mix well.

Put in about a 1/4 cup sour cream. Mix in good. Taste to see if potatoes need more salt and pepper. Add in more if you need more. Add in more milk if mixture is to dry. Potatoes should be creamy. I personally like them a little thick.





That's it! This is great comfort food. I made some French Cut Green Beans for my veggie. You can adjust the taste of this to your liking. If it's to salty, cut back on some of the seasoning. Hope you dig it!

Recipe of The Day: Ham Fried Noodle

I'm still trying post the things I've been cooking. The kids will be back in school soon, so I'll have plenty of time to create. Here is something that is so easy and pretty quick. Cooked this up for JP as a late night snack. This recipe can be created so many ways. If you've got a package of Ramen noodles the possibilities are endless!!! You can use things such has, chicken, kimchee, spam, cabbage, carrots. You can pretty much add whatever you want. It's up to you. Be creative! So here we go...


Ham Fried Noodles



Prep Time:5-10 minutes
Serving Size:1 person (or two if you want to share!)
Cook Time:10 minutes

Ingredients:
1 package of Beef Flavor Ramen Noodle
1 egg
1 stalk green onion
1/4 of a medium sized onion
1 tablespoon of soy sauce (less for less saltiness)
half packet of season pack
1/2 teaspoon Garlic Chili sauce
1/2 teaspoon sesame seed oil






Boil noodles. I don't like to let them cook to long. They still need to be a little firm.


While noodles are boiling, fry ham and onion in pan with a sesame seed oil.



Once noodles are done, drain. Throw in pan with ham and onions. Stir for a minute. Pour half of season packet over noodles and mix in well. Then pour in soy sauce and mix well.



Make a little well in the middle of pan. Crack egg right into pan. Stir egg a bit until it scrambles. Then mix everything together.



Drop in your chili sauce, mix well. Your done! Ready to eat! Oishi!


This dish is so easy. My kids love it, and it taste pretty darn good! Happy eating!

Recipe of The Day: Quick and Easy Ground Turkey Curry

Johnny and I love Indian food! I love all the different spices and flavors. I especially love all the different curry's. I also love Japanese curry, which isn't as flavorful and spicy as Indian curry. It is quite good. Sometime it can be poured over Tonkatsu or Kastu dishes, which is equally tasty. It's time to go grocery shopping so I had to work with what I had on hand. I had fish and ground turkey. I had a box of S&B Golden Curry (which is an island favorite), and the plan was on! Some people make a hamburger curry, but since we rarely eat ground beef anymore we'll do turkey. I also had a can of Chick Peas. The Indian place always has Curried Chick Peas which I love. So, I did some of those as well. So here we go...



Ground Turkey Curry with Curried Chick Peas

Prep Time: 15-20minutes
Serving:4-6 People
Cook Time:20-30minutes


Ingredients:
1 hot pot of rice
1/2 large onion
4 medium sized potatoes
1 box S&B Curry or any brand you like
1 can of chick peas
salt and pepper to taste
1/2 teaspoon Hot Garlic Chili Sauce (or to taste)
1/2 cup froze or fresh sweet peas
olive oil




In a large pot, drizzle a little bit of olive oil. Heat your stove to medium-high heat. Chop your onion. Throw in ground turkey and onion in pan. Cook turkey and onion until it is thoroughly cooked. You made want to add a bit of salt and pepper.

Once meat and onion are brown and done. Peel and chop your potato. Add in 2 1/2 cups of water. Add in your peas and let simmer. Cook until potatoes are tender.

Here is the curry looks. The kid thought it was a chocolate bar! lol I broke off a bit to add to the chick peas.
Here are my chick peas. I drained most of it, but kept some of the juices. I added a bit of water, some salt and pepper. I added the piece of curry and chili sauce, and let simmer for about 20 minutes.

Break the curry into pieces and throw into pot. Stir it around until all of curry melts and mixes in good with the rest of the ingredients.It should start to thicken and look like this. Let it simmer for about another 10 minutes or so. After that, it's ready to eat! Eat with hot rice, and don't forget the chick peas! Very easy and very delicious!






Look at all the peppers I've gotten out my garden! I'm letting some dry out! I have so many!

More Crazy Chicken!

I posted my son's giant nugget yesterday, and remembered that JP had pictures of his crazy giant pieces of chicken! I think these pictures were taken a few years back. I guess he had some Church's chicken for lunch one day, and this is what he got. These pieces seem abnormally large and quite deformed! Don't know what kind of chicken they are using over there. Hmmm....makes you wonder. lol
