Chipotle Trip #8 Marietta,GA



We took a day trip down to Atlanta this weekend. The weather was pretty nasty, but we still had a good time. We finally made it to Ikea! Wow...and wow!!! That place was huge. So many things it will make you sick! Aaand you know since we were there Chipotle was on our minds!

Because we visit Chipotle's in almost every area we find there is a location, I'm going to start numbering these visits. We pretty much stick to the same item every visit and I don't foresee us changing that. Our obsession is that sick. JP and I are still on the weight loss journey. One month and ten pounds later. We use our weekends as our cheat days. We tried to stay reasonable. You really don't want to know the caloric content of one Barbarcoa Burrito. :) But if you do...Google it! So, this trip we ordered Barbacoa Soft Tacos and one Burrito. The kids enjoy the tacos and chips. JP and I shared a burrito and had one taco each. Everything was good as usual. We enjoyed our meal, and didn't have to feel to bad about eating a days worth of calories in one sitting. lol

Our meal was Bangin, just how we like it. After our meal we enjoyed an evening of bowling with JP's car club buddies. Also, a while back we were told at the Charlotte location that they were opening two locations in South Carolina! Yay! One is going to be somewhere in Greenville, which a friend already spotted being built. Another will be right here in Columbia! Location still unknown. The burrito obsession will live on!

Out of Commision :(

I have been sick all week. Actually the whole family, with the exception of JP has been sick. This has been an awful sickness. I've had a fever for at least 4 days and am just now sort of feeling normal. Still not back to myself yet. The kids are recovering well. Once I'm back to my old self I will start posting again.

Five Guys Burgers and Fries


JP and I are on week three of our diet. On the weekends we allow ourselves to splurge. It actually works out really good. It's like you have this nice little prize to look forward to at the end of the week. That way you stay motivated and your still on the wagon. Ha ha! We try to decide what we will chose for our cheat meal either, on or before the weekend comes.

Last weekend we chose San Jose. We love that place! They have the best refried beans. So this weekend we chose Five Guys Burgers and Fries. There is actually one located very close to us. It is across from the Columbiana Mall in a small shopping plaza. There are actually several locations throughout the city. Every time we pass by, the place is always packed. Friends have given rave reviews as well.

Please excuse the camera phone pics, we forgot our camera. I think the pictures look decent to say it came from a phone.

Anyhoo...

When we got there it wasn't packed. People did start to show up later on. The place was brightly lit and had simple decor. They had large bags of potatoes stacked all over the place. Not sure if they really use those or if they are there for decoration. *shrugs* There was plenty of seating. We walked up and a young girl greeted us. We glanced up at the menu, to see that it was pretty simple and straight forward. They offer exactly what they are called, burger and fries. Well, they threw some dogs in there too. Burgers ranged from, plain, cheeseburger, bacon burger, and bacon cheeseburger. Then there were "little" options of those same burgers. Probably made for kids. They also offered Kosher hot dogs. Two of our younger kids chose the hot dog. The rest of us were having burgers. I ordered a regular cheeseburger, JP a Bacon Cheeseburger and my oldest a Little Cheeseburger.

On the bottom of the menu it says all toppings free. (I just noticed this while I was browsing the website). LOL When the girl said, "What do you want on it?" I said, "EVERYTHING!" JP of course did the same. I had no idea what this burger was going to look like. We also ordered fries. The girl suggested that we should only order 1 large fry. She told us that it could feed a family of four! We looked at her like, "Say what?" LOL We took her word for it and just got one order. Five Guys also offers free peanuts. They have a large bucket filled with them. They are free so you can have some while you wait on your grub. So we completed our ordered and sat down. The kids and JP munched on peanuts while we waited.

Our number was called, and JP went up to retrieve our goods! JP brought the goods back to the table. I got my burger and was shocked!


This is what I got! You can't see it, but this thing has two hand formed patties! TWO! It didn't say it was a double cheeseburger. And when I asked for everything I got everything! Onions, Pickles, Lettuce, Tomatoes, Cheese, and even sauteed mushrooms! There was probably some other things, but I can't remember right now. JP's was pretty much the same with the addition of bacon. The kids Kosher dogs looked more like smoked sausage. They said it didn't really taste like a hot dog.

Here are the fries! Can you see that! It came in a grocery sized paper bag! lol JP cut the top off so we could all dig in. They even had malt vinegar to pour over the fries. The fries were okay. You could tell they used real fresh taters. They had bags of them laying around the place.

You could see everyone was still munching on peanuts even after the food came.

Overall, I think JP and I enjoyed our burgers. I thought the burgers were really good. Kind of reminded me of Edna's. The fries were just alright for me. Even with the addition of the Malt Vinegar. The burger was a bit messy, but it had great flavor. I like all the toppings you can add. The sauteed mushrooms were really good and was nice addition to the burger. I would definitely come back for a burger fix. It cost $34 and some change for all 5 of us to eat. Which seemed a little high, seeing that there were magazine covers on the walls boasting of cheap eats. Food was good, we were satisfied so it was pretty Bangin!

Recipe of The Day: Spicy Turkey Meatball Soup


Hi all! JP and I are on week 2 of eating healthy. It is like freezing cold today. But, everyday in winter here seems freezing cold to me! My island blood has not gotten used to the cold. I felt it was the perfect day for a homemade soup.

I started thinking about soup yesterday. We got a of bunch pretty Roma Tomatoes.I knew I wanted to use them for something. So I thought about soup. I went to grocery shopping the other day and did not see anything that looked good to me. I didn't want to do just a tomato soup. It's a little boring for me. I'm sure it would have been boring for JP too. We are people who love flavor and substance. I made a vegetable stock yesterday, not really knowing what I was going to do with it. I got up today, and decided I'd wing it and just add in stuff as I went along. So here is what I came up with...

Prep Time: 20-30 Minutes
Cook Time: 45-90 Minutes
Serving Size: A lot of people!

Ingredients:

2 Cups Vegetable Stock or Chicken Broth (I made my own vegetable stock the day before)
5 Large Roma Tomatoes
1 Large Yellow Onion
1 Can of Ro Tel Mild Tomatoes and Green Chililes
1 Cup of 2% Milk (or whatever % you use)
1 Chicken Bouillon Cube
2 Cups Butter Beans (or any bean of your choice)
2 Cups Chopped Cabbage
4 Cups of Water
1 tsp salt
1 tsp pepper
1 tsp dry bay leaves
1 tsp dry cilantro
1 tsp cayenne pepper

Seasonings and Ingredients for Ground Turkey Meatballs:
1 lb Ground Turkey
1 tablespoon Olive Oil for frying
1 tsp Chili Powder
1 tsp Poultry Season
1/2 tsp Cayenne Pepper
1 tsp Salt
1 tsp Garlic Powder
1 Large Egg
1/4 Cup Panko


First thing you want to do is chop up your tomatoes and onions. In a large pot, add in your vegetable stock and water. Throw in your tomatoes, onions, and Ro Tel. Add in all seasoning except Cayenne Pepper. Bring to a boil, and then let simmer on Medium Heat 20-30 minutes. Once tomatoes are soft almost mushy like, take an immersion blender (or remove from heat and place in a blender). Blend up ingredients in pot until they are smooth. After you get it nice and smooth add in your milk and beans. Cover pot with lid and continue to simmer on medium low heat.

While your pot is simmering, prepare Turkey Meatballs. In a bowl combine all ingredients into turkey except Olive Oil. Add your Olive Oil into a large skillet on medium heat. Roll out meatballs. Add to pan and fry until browned. When you have cooked meatballs remove from heat and transfer into soup pot.

Once you have your meatballs added, let pot simmer another 20 or 30 minutes. After 20 or 30 minutes, add in your cabbage. Continue to simmer until cabbage is tender.

That is it. This is a low calorie hearty meal perfect for a cold day. All the ingredients are fresh and taste great. You can kick up the spice or take it down a notch. You can adjust the flavors to your liking. You can also add some tortilla chips to accompany the soup. Rice would also be good. Even bread! Hope you enjoy!

Grandma Tsuna's Maki Tuna Roll


Hey all! JP and I are on a quest to eat healthy. It wasn't a New Year's resolution. I personally just got tired of not fitting my clothes right, and you just feel so much better when your healthy. As much as we love to eat, and I mean looove! It's been challenging to come up with meals that still taste good to us and are healthy.

I've been doing a lot of Asian inspired dishes. There are a lot of healthy Asian dishes that are full of flavor and low in calories. I made a spicy noodle dish using the House of Foods Shiritaki Tofu noodles. Those were very good and extremely low in calories. We will feature that recipe soon. We even had Japanese Style Ginger Pork, another dish we will feature.

So anyway! I've been craving sushi. Sushi can be healthy and not healthy. I guess depending on what you put it in it, and how much you eat. But hey, you gotta splurge sometimes. I was craving my Grandma Tsuna's Maki Tuna roll! She always made the best sushi. I have scoured the net to find a recipe that seemed remotely close to hers. I didn't really find one. I did ask my Mom who told me what all she used. It took me a couple of hours to make 60 pieces of sushi. Well worth it though. I also made my first Tamagoyaki. It was okay for a first attempt. My omelet skills kinda suck. LOL So I was a little afraid to make it. The roll requires this egg omelet. So, I had to suck it up and try. I think it came out good. You can also use Tamagoyaki in bentos. A lot of them have this piece of egg to go along with the rest of the food. Another ingredient in this sushi is Kempo. I'm not fond of Kempo so I omit that. So overall, the sushi came out excellent. It tasted just like Grandma's. I was so happy.



There is my Tamagoyaki. It could be better. I'll just keep trying. To make Tamagoyaki, you will need 5 Eggs, 3 Teaspoons of sugar, 1 Tablespoon of Mirin (Japanese Rice Winer Vinegar) and 1/2 a Teaspoon of salt.

You will need to beat all of the above ingredients. The tricky part of this for me is the rolling part in the pan. I think it's easier to use a small pan. I believe there is some square fry pan made specifically for this. So I used a large nonstick skillet. I had my stove on medium-low heat. You don't want it to high. You will also have to work fast. You are going to layer this. So add in a thin layer of egg in the pan. Let that set up. Once it sets, start to roll it up. Once you have that rolled and off to the side of the pan, add in another thin layer. Once that layer sets, roll it up until it touches the first layer. You want to keep doing this process until you've used all of your egg. You should come out with a nice layered thick omelet. Mine isn't a good example, but it works. I've seen people also use the bamboo sushi mat to make it square once it's done. Then just cut and use however you like. Mine was used for sushi.

This is the final product for the Maki Tuna Roll. If you would like to make the filling for these. Use the above egg recipe for that part. For the tuna, you will need 1 can of Tuna in water, 1 Tablespoon of Sugar, 1 Tablespoon Soy Sauce ( I use a strong Korean Soy Sauce so I do little less than a Tablespoon), 1 Tablespoon Mirin. Saute all of those ingredients in a pan until it's well incorporated. For the spinach, I used the frozen kind. I boiled it in some salted water for about 10 minutes or so. I drained all the water off and squeezed off the excess.

I also added in some of this, Sakura Denbu. This is a Ground Sweet Codfish. You could find this in an Asian Market. My Mom brought this from California for me. This also taste good in Onigiri, Japanese rice balls.

You will also need to prepare some sushi rice. You can view my recipe for California Rolls here.

You can follow the recipe there for the rice. It also shows you how to roll the sushi. You can layer your filling anyway you like. I laid down my tuna first, then I spread the Sakura Denbu, Egg, and then spinach. Then I roll and cut into pieces. It is very time consuming. You might not get it down pat at first. But, practice makes perfect. It's also cost efficient. Because, buying already sushi is costly. How many people can say they make their own sushi? You can also be creative. Try different fillings. It's all according to your taste. This is one of my favorites. I hope you try it! Enjoy!
