Quick Recipe of The Day: Stir Fried Brown Rice and Salmon


Hi all! I'm going to start sharing some of the healthy food we've been eating. JP and I, are still maintaining this healthy lifestyle. So I'm going to start posting some of the things we eat. These recipes have helped us shed all of that unwanted weight!

JP and I are on a high protein diet. So we consume a lot of chicken breast, tuna,and salmon. People always assume that if you eat healthy, food is bland and boring. I'm here to tell you that's so not true. JP and I love spice and flavor. So we've been finding lots of ways to jazz our dishes up. Here is a quick lunch I whipped up for myself today. This is for an individual serving. You could double it to make more. The whole meal is about 307 calories with 21 grams of protein. You could omit the oil to bring the calorie count down a bit. You could also add in more veggies or even maybe egg whites for added protein.


Stir Fried Brown Rice and Salmon

3/4 cup cooked Brown Rice (I had a pot already made)
1/4 cup Pink Canned Salmon (or fresh if you like)
1 cup chop and rinsed Baby Bok Choy
1/4 cup onion chopped
1 teaspoon Garlic Chili Sauce
Salt and Pepper
1/2 teaspoon Pure Canola Oil or Olive Oil


In a small saute pan, add in oil. Let it coat the bottom of the pan. Throw in your Baby Bok Choy and Onions. Saute for minute or so. Add in your Salmon and continue to saute. At this point you could add in a couple dashes of salt and pepper. Add in your brown rice, add in a little bit more salt. Throw in your Garlic Chili sauce, more or less depending on how much spice you like. Get it all nice and mixed up. Saute another minute then plate.

This is a great tasting meal. It's quick and easy. It has a lot of flavor. It's also filling. I also made it with spinach. So there is my quick meal for today. Be sure to look out for more healthy food posts! Have a great day!

Trying something new...



In my quest to cook us more healthy meals, I bought us some Salmon fillets. I began searching the net for some good fish recipes. I wanted to try something different. I knew I wanted ginger to be in the recipe I was looking for. I ended up finding this recipe for a Soy Ginger Salmon. The fish is marinated in a mixture of soy sauce, brown sugar, ginger,olive oil, OJ, lemon pepper and garlic salt. It says to marinate overnight, but I marinated mine for about five hours. You also rub a bit of the brown sugar, lemon pepper and garlic salt into the fish. The taste still came through. I broiled the fillets in my oven in a shallow baking dish lined in foil and basted it with the marinade until it was nice and golden brown. Overall I really like the flavor. The ginger and soy sauce and brown sugar taste really good together. It has a Asian flare to it! I cooked it with some Yellow Rice and Broccoli. I may add this to my recipe box. The people's comments on the site where I got it from didn't seem to like it. I think it was good. I followed the recipe exactly how they had it. Recipe of The Day: Salmon Patties/Croquettes

This is really JP's specialty, but I make it also. I will say he is the expert on salmon patties. This is another easy recipe, and takes no time to prepare. Here we go...


Salmon Patties or Salmon Croquettes

Prep Time:15 Minutes
Cook Time:20 Minutes
Serving: Feeds a family of 4

Ingredients:

1 can Salmon
1/2 cup onion (or more)
2 eggs
1/3 cup flour (or more if mixture isn't thick enough)
1/2 cup of oil for frying
1tbl spoon seasoning salt (or more it's to your taste)
salt and pepper to taste (you can taste while raw to make sure. Nothing will happen.)

Open can of Salmon pour out juice, but not all leave a little bit in the can. Use a mixing bowl to mix up all your ingredients. Start with the Salmon, pour all contents into bowl. You will need to pick out all of the bones. Chop your onion and throw in bowl. Beat eggs, and add to bowl. Add your seasoning and mix well. Add a bit of flour to thicken up mixture. Heat oil in a frying pan. Drop a tablespoon of mixture into hot oil. Fry until crispy and golden brown.

JP Note: Notice how the oil only comes up to about half the height of the patty. This lets both sides cook evenly and you can see the progression as it browns on either side. More oil is not always better.
